Squash and More Squash

The squash are coming in in our garden! So far in the last week or so we've had fried squash, squash kabobs on the grill, squash fritters/puffs, and squash casserole. Any new squash recipes would be appreciated! :)

Oh, and I forgot the stuffed squash we had one night...they were really good, too. Maybe I'll just do stewed squash tonight... :) They're coming in pretty good now - and I'm really glad to have them! So good and fresh - if I can just stay ahead of them! :)

I've also heard of stuffed squash blossoms, but I don't know what they are. What do you stuff them with? How do you stuff them? How do you know there aren't any little bugs inside of them?

This is how I do it...

I wash the squash and cut the ends off, then cut the squash in half lengthwise. I boil it for a few minutes, maybe 5 or 10. Next I scoop out the seeds and then fill the halves with whatever I like. I've tried different combinations of some of the following: stuffing (cornbread or stovetop or something else), soup (cream of whatever), butter, onions, cheese, other veggies (carrots), etc. - just whatever sounds good. I've also tried ham, cheese, and onions. I just fill them with what I have on hand that sounds good at the time, then put them on a baking sheet and bake them in the oven until the cheese gets sort of crispy on top. There's probably a "real" recipe somewhere, but I adapted the recipe I heard and now I'm not sure of the original!

We've got zucchini coming in pretty good now, too, so maybe we'll do some bread. And I think we're going to can squash tonight! Thanks so much for the seeds - they've done really great!!

Oh, and about the squash blossoms, I think I've heard of frying them or something, but I'm not sure. I've never tried anything with the blossoms, but I think there is something you can do with them...

I think I'll have to draw the line there, with squash fudge, but we can add a couple more items that we've had just recently - squash stir-fry wraps and we've canned squash.

I slice squash, shake it in a bowl of cornmeal, spray a cookie sheet, lay the squash on the sheet, spray the top of the squash, put tin foil over it, bake at 350 for about 20 minutes (until brown on bottom), turn squash, bake another 10-15 minutes. It's like fried squash without the calories.

Dad does his by putting butter or margarine in a pan and tossing the squash with sliced potatoes and onions and salt and pepper to taste, then cooks it until the potatoes are coked. It is my most favorite way to eat it...
You could also make a yummy zucchini bread. That sounds good. I might make zucchini bread today.
Unfortunately Shawn does not appreciate squash, or we would eat it for dinner every night in the summer.

We actually had squash and potatoes at lunch today, but not cooked together. I think that sounds good, though. And Adrian made some zucchini bread yesterday, too. A friend of mine from work gave me a recipe for a mock apple pie using zucchini. We haven't tried it, but it's supposed to be good.
